Shou Puerh is fermented in moistened piles for 45-60 days. Some of this tea forms into chunks due to the nutrient and enzyme-rich environment. These lumps can then be used to help further fermentation in other piles, and ultimately be used again and again. Whether you sense it directly or follow science, “Cha Tou” as they are called in tea factories are healthier for our bodies than most kinds of Shou Puerh.
