Tie Guan Yin “Iron Goddess”

A direct descendant of the original Tieguanyin plant from Anxi, Fujian, Tieguanyin is more oxidized and more roasted in Taiwan. The traditional method is a meticulous process lasting several days. Expert hands wrap and roll the leaves repeatedly in between carefully controlled charcoal roastings and resting periods. The result is truly worth it: a sleek exterior of tightly rolled balls, a glossy dark broth, and within the thickness of roasted flavor, a subtle citrus note hidden within sweet fruit.
