Classic Tie Guan Yin, otherwise known as the “Iron Goddess” tea, is made from the leaves of the Tie Guan Yin cultivar. Making Tie Guan Yin the traditional way is a long, meticulous process lasting several days. It includes heavy oxidation of the leaves, repeated wrapping and hand rolling of the leaves in cloth, and a traditional way of repeatedly roasting the leaves over charcoal in between resting periods. Tie Guan Yin that is handmade according to old customs is extremely rare due to its painstaking and time-consuming process. However, the result is truly worth it: a sleek exterior of tightly rolled balls, a glossy dark golden to reddish-brown broth, an intense flavor of ripened fruit, and within the thickness of flavor, a subtle citrus note hidden within sweet fruit.
